Maple Bacon Gelato
We only did half a batch our first time making this. We were unsure of how it would turn out, but after we tasted it, we were regretting our decision to make only half a batch...this stuff was delicious!! Here is our recipe for half a batch, but if you have hungry beasts around when you make this, I'd suggest making a full batch! Every beast in the house will be forgetting their manners when they have a taste of this! Half Batch 500g whole milk 100g cream 1/2 c. Real maple syrup 105g brown sugar 25g Tuttopan 50 25g Dry skim milk powder 4 Stirips of bacon (remove fat) Mix dry ingredients in separate bowl. Mix liquid ingredients together in a saucepan. Heat. When temperature reaches 104 degrees, add your dry ingredient mixture. Continue heating until temperature reaches 180 degrees and all dry ingredients have dissolved. Remove from heat. Freeze in ice cream freezer. While gelato is freezing, cut bacon into small bite size chunks. Cook bacon on stove top. Drain the grease. Pat bacon dry. Throw bacon back into the pan with 1/4 cup of brown sugar. Stirring frequently. After sugar carmelizes, remove bacon from pan and chill in the fridge for about 10 minutes. Your gelato should almost be done freezing at this point. Add bacon just before gelato finishes freezing. That's it! Remove gelato and place in the freezer or if you're me, beast it down immediately! Enjoy!
